For years I’ve been a huge fan of oatmeal cookies. In fact, I’ve used this recipe (Vanishing Oatmeal Cookies-recipe by Quaker Oats) to make oatmeal cookies for six and a half years. About six weeks ago as I was in that half awake, half asleep state, I had a thought (dream?) that made me sit straight up in bed. I wanted to run to the kitchen right away to get baking, but it was the middle of the night, so that wasn’t going to happen. I scribbled down some notes and went back to bed, and didn’t end up making these cookies until two weeks ago. I’ve now made them twice, and they are delicious! This recipe is very much based off of this recipe (just giving them credit!).

Ingredients

Here’s what the step by step looked like:

Mix butter and sugars together, then add egg, vanilla, and pumpkin

Mix flour, baking soda, pumpkin spice, and salt together in separate bowl. Then add slowly to butter/sugar mix.

Then add in the oats and cranberries.

The directions suggest baking at 350 degrees for 8-10 minutes. You’ll have to watch your own oven but I ended up cooking mine for closer to 14 minutes.

The result? Delicious cookies that taste like fall! You can also put this mix into a pan and make pumpkin oatmeal bars! These cookies hold really well and are the perfect snack.

I also feel like they count a little bit as breakfast since it has oatmeal, cranberries, and pumpkin in them (which I eat for breakfast anyways)! Win-win, right? These would be perfect to make for a Thanksgiving meal too. I’m always looking for great desserts that are lactose free, so this is a popular choice for me.

    Holy yum!!! I love oatmeal cookies in all forms and these looks great!! Growing up my gram and I always made “monster” cookies w oatmeal, pb, m&ms, choco chips etc. They were my fave!! Have a great day! Spa <3
