I’m lactose intolerant, but I’ve recently found a type of cheese that is not only lactose free, but tastes exactly like regular cheddar cheese. It’s delicious and I can hardly keep my hands off the stuff! (The cheese is called Cabot Vermont Cheese, found here.) In the fall I’m constantly trying to figure out ways to incorporate pumpkin into my recipes, and this weekend I created one of the most perfect grilled cheese sandwiches!

Ingredients

First spread pumpkin on one side of both pieces of bread. I put enough on to make it moist and get a great pumpkin taste, but I didn’t put it on really thick. I then placed the slices of cheese on it, followed by a bit of pumpkin spice!

On top of the cheese I put sliced chicken and red onion. Red onion goes perfectly with the cheese and adds a bit of crunch to the sandwich!

I covered one side of the sandwich with butter and put it in a skillet on the stove on medium. After a few minutes I flipped the sandwich. When both sides were golden brown and the cheese was melted, the sandwich was done!

Delicious! This sandwich screamed of fall, and the pumpkin, cheese, and onion flavors complemented each other really well! I’d love to try cranberries or apple slices in this sandwich as well. Of course ham or turkey could also be used (or meat skipped entirely) in this sandwich! This sandwich will definitely be making a frequent appearance for lunch and dinner over the next few months!

*Disclaimer: I do need to mention that when my dad made this sandwich he put on too much pumpkin, and didn’t like the sandwich at all. Start with a small amount on each piece and you can work your way up… unless you love pumpkin of course! My mom said the first bite tasted a bit weird to her, but that overall she really liked the sandwich.

      haha. Well thanks. I’m not sure why I thought of it either. I usually come up with crazy food ideas late at night, and I was definitely stuck on cheese and pumpkin this past week.
