I love eggs and avocado, so I thought this would be an excellent quick and easy meal to make. I guess I shouldn’t have been quite so confident.
It came out looking pretty ok (that’s a little bit of red onion in the egg). I was excited to eat it (and pretty hungry by this time as it took longer to cook than the directions said), so I excitedly put it on a plate to eat. I took the first bite and actually gagged. Now, I love all three of these foods separately and together (i.e. in omelette form), but this was not good. Not good at all. I actually felt like I had taken a big bite out of a soggy diaper. Now, I’ve never actually taken a bite out of a soggy diaper before, but the taste of the avocado and egg was what I imagined it tasting like. It was disgusting- so much so that even two years later I still gag a little bit just thinking about it.
So, there’s a pinterest fail for you all. I guess sometimes in life we need things to not quite work out to keep us humble and give us a good laugh and story for the future.

Lol this was hilarious, thanks for sharing! I’ve always wanted to make those avocado eggs. Now I’m a little scared of the soggy diaper taste though… Glad you clarified that you’ve never actually taken a bite out of a soggy diaper too 🙂
haha- I’m glad you enjoyed it. I sort of want to try it again to see if it tastes as bad because, like I said, I like the taste of them together most of the time.
AHAHAHAH caroline, I had this same conversation with my boyfriend a couple months ago. I was totally amped to try this, did it, and did NOT enjoy it. It was so bland. I’d rather have it sliced with some tomatoes on toast, or my all time fave, guacamole!
I agree- there are so many better ways to eat these foods combined!

Thank you Caroline for this – it seems that there are things that we do that others might not find so easy nor indeed palatable… but it is still good to know there are all ways new things to try – they might not be what we expected but we also might be coming from a different perspective. I too liked the idea of this, but was never sure of its ‘texture’ I might still have a shot at making it – I might change the recipe slightly myself but I am up for the challenge of changing how I experience something I already like in combination with other things I like. it is a bit like people we like lots of different people, they sometimes don’t like each other…now Iam wondering if you are wondering how that might be?

love this! I had a fail last night…tried a new recipe and mine looked exactly like they were supposed to and probably tasted just like they were supposed to…but I didn’t like them….i don’t like tuna and I thought the recipe might be a good way to eat some fish…but nope…not enough other flavours to hide that fact that there was tuna in there. Oh well…live and learn!
Bummer for you- I don’t like tuna really either (except this one type of tuna in Ecuador that was actually really good). Sorry it didn’t turn out the way you wanted it to.
